Rhubarb Strawberry Pie
My parents came over for dinner and little did I know that my mom would be bringing me a huge bundle of rhubarb from the garden. It’s really the only thing that’s been growing since it’s been pretty much raining the entire summer so far. I love the sweet and tart taste that rhubarb has. I remember as a child just ripping it from the garden and eating it right there on the spot. Occasionally I would dip it into sugar but that took too much work.
Since I haven’t made pie in a while I would treat J and I to a fresh homemade strawberry rhubarb pie. If you think that I made the crust, think again. I cheated and bought a frozen presidents choice brand that always turns out perfect. I told my mom this and she might have gasped. She then promised to teach me to make proper crust. The filling was so easy, and the hardest part of making this pie is waiting to eat it.
Ingredients
- 3 cups rhubarb cut into 1 inch pieces
- 3 cups fresh strawberries cut into 1 inch pieces
- 3-4 table spoons of cornstarch
- ¾ cups sugar (I used less because it wouldn’t all fit)
- ¼ tsp ground cinnamon
- 1 tsp fresh lime juice (optional, most people use lemon)
- 1-2 tbsp butter cut into small chunks ( I forgot this step)
Place the cut strawberries and rhubarb in a large bowl. In a small bowl mix together the cornstarch, sugar, and ground cinnamon.
Remove the chilled pie crust from the fridge. Sprinkle about 2 tablespoons of the sugar mixture over the bottom of the pastry crust. Add the remaining sugar mixture to the strawberries and rhubarb and gently toss to combine. Pour the fruit mixture into the prepared pie shell.
Sprinkle the fruit with about 1 teaspoon of lime juice and dot with 2 tablespoons of butter.
Put top onto pie and poke holes for steam. Cook as per directions on crust box. I cooked mine on 400 degrees until the crust was brown, filling was oozing out, about 30-40 min. Let cool completely before serving to make sure the filling has set and won’t be runny.
J has said on numerous occasions now that this was the best pie he has ever eaten. I have to say it was pretty darn good too. Such a great summer treat!!
