Grilled Zucchini Rolls with Feta and Avacado

During a torrential downpour last week I made the silly decicion of making a side for dinner that required some grilling. I could have waited for a nicer day, a day of sun, a day with a nice breeze, a day of clouds even but no, I grilled in a down pour. It did make me a little grumpy, especially since J ran away and I was left by self to bbq in the rain all but in the end it was worth it. Worth the grilled zucchini rolled with feta and avocado.

Sweet Balsamic Marinade:

  • 2 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoons honey (I added a bit less, grill naturally sweetens zucchini)
  • 1/4 teaspoon smoked paprika
  • salt and pepper
  • 1/4 teaspoon freshly ground pepper
  • 1 tsp garlic powder

Cut your zucchini lengthwise into strips, not too thin or thick. Combine all ingredients in bowl and whisk to combine, and let your sliced zucchini soak while you heat the bbq.

 

Zucchini Rolls:

  • 1-2 zucchini’s (depending on size….I bought 2 small ones)
  • 1 large avocado
  • 1 tablespoon lemon juice
  • 8 ounces feta cheese

Place on the heated grill and cook on each side until slightly tender, about 2 minutes. Remove and allow to cool to room temperature. While the veggies cool, put avocado into a bowl and mash it up with lemon juice, salt and pepper. When veggies are cool enough to handle spread the mashed avocado onto zucchini and crumble on the feta. Roll and attach toothpick.

 

There is a nice sweetness that comes out of grilled foods that I can’t get enough of. The best way to compliment this sweetness is a nice marinade and this one definitely did the trick. It just enhances the veggies so much more. The feta and avocado was a nice touch, since I love those as well, but I would be inclined to just eat the zucchini on its own! SOO YUMMY
