Attention everyone! You all must do something good for yourself and your bodies. Eat some salmon!

There is nothing better then filling yourself with omegas, proteins, and delicious food all at once. As much as I love me some mac & cheese, burgers, pizzas, and creamy pastas there comes a time that my arteries need a break and salmon will do the trick. J isn’t a huge fan of salmon, which is weird because he loves sushi, white fish, shellfish but he thinks salmon is too “fishy”, well duh, it’s a fish.

When I do decide to make fish I have to get creative and make sure its going to be flavourful enough to keep him happy but not so much that it entirely masks the delicious flavour that I love in the fish. Smothering it in teriyaki or a sweet sauce is acceptable to J but there is so many more that I want to try! The other night I did my own thing and made a chilli rubbed salmon baked in the oven with a lime yoghurt sauce.

Salmon Rub

Ingredients

  • large salmon fillet
  • 1-2 tbsp chilli powder
  • 1 tsp smoked paprika
  • ½ tsp cayenne
  • tsp garlic powder
  • 1/2 tsp chipotle mango powder (I assume not a lot of people don’t have this so omit or add a touch or sugar and chipotle powder)
  • salt and pepper

Preheat oven to 350. Add all seasonings in a bowl and rub onto salmon fillet so that it turns red and leaves behind a small coating of the rub. When oven is ready cook for 30 min to 1 hour depending how thick your salmon is. Mine cooked for around 45 min.

The rub could really be made with any kind chilli powders you have. I didn’t really measure mine and just added whatever I though would taste good together, which is why I added some of the chipotle mango powder in the end.

Lime Yogurt

Ingredients

  • 1 cup of plain yogurt (I used Greek)
  • Zest of one lime
  • 2 limes juiced
  • Salt
  • A dash of hot sauce or sriracha sauce (not to make it spicy, just to add some depth)

Add all ingredients together and stir, taste, adjust flavours.

I have to say that this salmon was very impressive. The chilli rub added a nice deep flavour to the salmon but wasn’t spicy at all. You definitely could add more cayenne if you wanted some heat, especially since the lime yogurt will mellow that out. Lime and Chilli do make a good couple so naturally it tasted great on top. I also could still taste the yummy salmon, which is very important to me as well. I think J, the salmon hater, liked it too! Now go make some salmon!
