Saturday seems to always be the perfect night for a steak dinner. Well, actually any night is great but there is nothing better than sitting down to an amazing steak dinner on a relaxing weekend with a beer in hand (or red wine…yum!). With my steak I usually enjoy the simple “meat and potato” theme paired with a salad and garlic bread, but I was inspired to make my simple meal a bit different and this meant substituting the garlic toast with fresh herbed bread.

I am by no means a baker; in fact measuring out ingredients to a T is a challenge and not knowing what the end result will taste like until it’s finished also bothers me. I am the kind of person who likes to taste while I cook and add or subtract whatever ingredient I chose.  Luckily with this bread it has minimal measuring and it’s easy enough to just toss on any type of topping you want. I wanted mine to be similar to focaccia but not thick or fluffy.

The dough I used is your basic pizza dough recipe. You can use my easy pizza dough recipe, but I recently bought Fleishmann’s pizza yeast and the recipe on the jar is even easier because there is no need to let it rest for 10 min. If you want to cheat then buy some pre-made dough but don’t use pre-made crusts because I don’t think it won’t turn out the same.

Once you have your dough rolled out to your desired thickness your topping get thrown on. I first lathered mine with a nice coat of extra virgin olive oil. I pre-made some roasted garlic, mashed it and plopped it all over. I then put about 4 springs of fresh chopped rosemary on top and finished it with fresh grated black pepper and fresh grated pink Himalayan sea salt. I don’t expect you to have Himalayan sea salt but please don’t use table salt, go out and treat yourself to some good quality sea salt. You can even get them with the grinders built into the plastic jars. It’s well worth it. Sea salt is also considered kosher too just in case that is important to you.

Put the pizza in a pre-heated 475 degree oven and cook for 10 min. I have a pizza stone so I tossed my dough on that but use a baking sheet or pizza sheet if you don’t have a stone. If you like pizza then treat yourself to a stone too while you’re out getting your sea salt. Another inexpensive purchase that’s well worth it!

Once it’s cooked I cut mine into long strips. The bread was slightly crispy, slightly salty, sweet with garlic and had a flavourful punch of rosemary. J ate 4 pieces before I even got it to the table. This went so good with steak night! I am sure I will be making variations of this again and again.
