On the way back from Seattle J and I killed some time in Bellisfair Mall just so that I could eat one last dinner in the states. By this time I couldn’t remember where people had suggested I go for Mexican but I truly wanted to try and find somewhere that serves Mexican food in Bellingham. Luckily we did find a place called Mi Mexico close by the mall but I am pretty sure it wasn’t one that was suggested. J was a little hesitant based on the sign saying “family restaurant” but we were done with driving around. Mi Mexico is located at 241 Telegraph Road Bellingham, WA
The first thing we noticed, other than the brightly coloured interior, was the fact that there was a lot of Mexicans eating in the restaurant, and the staff was all Mexican. This seemed like a good sign. Immediately when we were seated we were brought a big jug of water and also a basket of chips and salsa. I LOVE complimentary chips and salsa, and I think all Mexican places should do this. It’s like getting a baguette with whipped butter in an American style restaurant. Anyway, the chips were warm and lightly salted and had a nice crunch. The salsa had a nice bite to it which I immediately got addicted to and couldn’t stop eating! I probably could have just had chips and salsa all night.
J and I both got regular sized lime margaritas which were pretty average. They were both under 5.00 and tasted like they had a lot of tequila in them. If I hadn’t been so tired and ready to cross the border I probably would have had another but at this point I was sucking back the water like there was no tomorrow.
The menu has a huge selection and seemed a little overwhelming at first. J knew he wanted chicken fajitas right away and barely looked at menu. I had a slightly harder time but decided on the Chicken Burrito. J’s fajitas came first and on 2 large platters. The chicken was cooked with onions, green peppers and tomato. On the second plate were the refried beans, rice, pico de gallo, guacamole and sour cream. He absolutely loved these and didn’t talk much at all while eating. I tasted them as well and thought that the chicken was nicely seasoned and of course the amount of toppings was great.
My burrito came next and I was amazed that the burrito was the size of the entire plate. It was also topped with guacamole, pico de gallo, sour cream, diced tomato, lettuce and onion. Inside was all the shredded chicken. There was also a really watery sauce covering the plate as well which was a mild watery chilli flavour. I have never seen that before and it sort of made the tortilla soggy. The chicken was a little on the dry side but since there was a lot and also a lot of sauce to moisten it up with made it good. I did find myself scooping the spicy salsa that came with chips for more bite since the chicken was also a little bland. By the end I think I was picking at Jason’s more than mine so I think I preferred his over mine.
For 2 meals, and 2 drinks we only spent around 32.00 USD so for the value I think this place was great but I definitely want to try another Mexican restaurant next time.
